Kombucha is a fermented tea drink containing beneficial live bacteria, yeasts, and acids. Probably originating in Dynastic China, it has been enjoyed as a tonic for at least 2,000 years, believed to aid the digestion and impart a feeling of well-being.

 

Over the ages and across cultures it has been known by many names including the  Elixir of Life, Manchurian Mushroom, Russian Flower, Medusa Tea, Olinka, Hongo — and just plain old booch.
